Read the whole recipe first

Check the method as well as the ingredient list. Chilling, resting and cooling can take longer than the hands-on work, so leave a little room in your plan.

Weigh when the recipe gives grams

A kitchen scale helps you repeat the same amount each time, especially with flour. Use the measurements in the recipe rather than switching between volume and weight halfway through.

Prepare your tin before you mix

Grease, line or flour the tin as directed. Set out the tools you need so you can move from mixing to baking without a last-minute search.

Know when to stop mixing

For muffins and quick breads, mix gently once the flour goes in and follow the recipe’s cues. Bread dough, meringues and other bakes need different techniques.

Give cooling its own time

Let the recipe guide you on when to turn a bake out. Cool cakes fully before frosting, and give fillings time to set before slicing when the recipe calls for it.

Keep a note for next time

Write down the tin you used, your oven’s timing and any changes you made. A small note is a helpful starting point when you return to a favourite recipe.
